Bored of turkey curry? Our Leftover Loaf is filled with layers of turkey, stuffing, cranberry sauce and more, and makes for the perfect Boxing Day tea!
325ml water
2tbsp sunflower oil
2 tbsp cranberry sauce
50g baby spinach leaves, stalks removed
200g leftover cooked turkey, thinly sliced lengthways
150g cold stuffing mix, thinly sliced
125g mozzarella, thinly sliced
olive oil, for drizzling
Squeeze of lemon juice
Bake the bread mix following the instructions on the bag. Once baked, leave to cool completely on a wire rack.
While the bread is cooling, make up the stuffing mix and spread evenly across a non stick baking tray to about 1cm thickness. Once baked and cooled down, cut into slices.
Carefully slice the top off the loaf and pull out most of the crumb, leaving just a thin layer and taking care not to break the crust.
Spread the cranberry sauce over the inside of the loaf. Fill the loaf with layers of spinach leaves, turkey, cold stuffing, peppers and mozzarella, seasoning with salt, freshly ground black pepper and drizzles of lemon juice and olive oil as you go.
When the loaf is full, replace the top and wrap tightly in clingfilm. Leave to set in the fridge for at least 4 hours (or overnight).
To serve, unwrap and cut into thick slices with a bread knife.
