"Remember our Gluten Free Magic Bake Off champion, Kate Hardie? Well earlier in the month we caught up with Kate to talk about gluten free cooking, her love of baking and of course to hear all about her winning creation - the Blooming Lovely Citrus and Poppy Seed Celebration Drizzle Cake, filled with Prosecco Cream and Homemade Blackberry Jam. When we launched the Gluten Free Magic Bake Off (GFMBO) competition in August we couldn’t have imagined engaging with so many enthusiastic bakers.
Over eight lively weeks we received a total of 111 entries into the competition, culminating in Kate Hardie being crowned the winner. In fact, Kate did more than just talk about her GFMBO win, she visited Delicious Alchemy HQ to recreate the winning showstopper bake! We were delighted to see Kate, and in between mixing, blending and decorating, she offered her words of wisdom behind the Blooming Lovely Citrus and Poppy Seed Celebration Drizzle Cake. And blooming lovely it was… Kate has always loved baking and when her son William was diagnosed as Coeliac she wanted to practice her culinary skills even more. Kate said: “It was a life changing moment, because as a family we all had to change our dietary requirements… My best tip for gluten free baking is to practise, practise, practise!"" “When creating the showstopper cake I wanted show off the Delicious Alchemy Vanilla Sponge Mixto the best of its ability, so I opted for a rustic style celebration cake. Citrus flavours go so well with vanilla so I decided to use lemons and oranges in the recipe.”
We at Delicious Alchemy think the Prosecco Cream was a fantastic addition to the winning cake and it certainly adds that wow factor we were looking for. Kate added: “There are so many elements as to why I find baking fulfilling. I love the precision of measuring out the ingredients and paying careful attention to detail in the presentation of the finished bake. As a graphic designer, detail is something I pay particular attention to and I treat my baking in the same way.”
Our winning baker also revealed her favourite Delicious Alchemy product: “I love the Chocolate Brownie as it tastes really indulgent. I think it is hard to tell that they are gluten free. They have become a firm favourite in our household!” Kate offered her words of wisdom to all gluten free bakers out there: “Keep things simple and don’t use too many ingredients, but don’t be afraid to experiment!” We think you'll agree that Kate is a worthy winner of the GFMBO Champion title and we can assure you that the cake tasted wonderful, we even had some for breakfast the next day!
