"Last month saw the release of our brand new product - the gluten and dairy free Christmas Fruit Cake mix! Our new blogger friend, Glutarama, was one of the first to try our delicious new mix. You may remember Glutarama from a previous guest recipe she did for Gluten Free Malt loaf, using our Gluten Free brown bread mix. Glutarama is run by Rebecca, whose daughter is not only coeliac but also Type 1 Diabetic.
As you'll see from her blog, Rebecca has a real skill for creating delicious gluten free recipes, and this one for gluten free Christmas pudding is no exception! Below is her guest recipe for Christmas pudding, using the Gluten Free Christmas Fruit Cake mix:
Method 1. Make the mixture as directed on the packet
2. Divide the mixture into two, approx 400g each (if you are not making two Christmas puddings, the other half can be used to make a mini Christmas Fruit Cake!)
3. Take one of the 400g mixtures, and add the grated carrot, mincemeat, almonds, brandy and baking powder - mix thoroughly
4. Grease a 1ltr glass bowl and pour in the mixture, then pleat a piece of greaseproof paper to allow for expansion and repeat with a piece of foil
5. Tie the foil and greaseproof paper in place with some string and add to a large pan of water - the water should come halfway up the side of the bowl
6. Steam for 3 hours – make sure you keep topping up the water!
7. To reheat, simply steam for 40mins We will certainly be giving this recipe a go here - any excuse to get baking to Christmas songs with a glass of mulled wine in hand!
