Guest Recipe Gluten Free Cherry Bakewell Flapjacks

"We noticed one of our favourite bloggers, Cheery Little Thing, has been getting rather creative in the kitchen recently. Using our Rice Flake Porridge, she created this delicious recipe for gluten and dairy free cherry bakewell flapjack.  It sounded so tasty, we just had to share!

Gluten Free Cherry Bakewell Flapjacks Recipe by CheeryLittleThing

Ingredients:
  • 100g coconut oil, melted
  • 175g glacier cherries, halved
  • 90g ground almonds
  • 100g gluten free self-raising flour
  • 175g Delicious Alchemy Gluten Free Rice Flakes
  • 1 beaten egg
  • 4tbsp golden syrup
  • 3tbsp maple syrup
  • 2 tbsp strawberry jam
  • Optional: 30g icing sugar mixed with 1tbsp cold water to top the flapjack and a handful of glacier cherries to decorate
  What you’ll need:
  • 1 large bowl
  • 1 wooden spoon
  • 1 square baking tin, lined (I used a silicone tin as it’s a little deeper than my other square tin)
  • Tablespoon, scales etc
  Method:
  1. Pre-heat the oven to gas mark 4
  2. Measure out your ingredients and melt the coconut oil
  3. Put the rice flakes into your bowl and then add the flour and give it a quick stir
  4. Add the ground almonds and cherries and stir again
  5. Add the golden syrup and maple syrup to the bowl followed by the beaten egg and coconut oil
  6. Stir to combine the mixture
  7. Add in the strawberry jam and messily swirl into the mixture
  8. Pour the mixture into the baking tin and flatten so it’s even
  9. Pop into the oven for 25-30 minutes and cook until the top of the flapjack is golden brown (it's best to check after 20 minutes as all ovens have their own foibles)
  10. Leave to cool for at least 30 minutes - it will crumble in your hands otherwise
  11. Remove from the tin and cut into small squares
  12. Optional- Create the icing topping and slather over the top of the flapjack, decorate with the remaining cherries
  13. Enjoy with a cup of tea

To make this recipe egg free - use a small mashed ripe banana instead of the egg
